I find that hickory, mesquite or apple wood are great choices. The point is to use hardwoods with a good amount of smoke flavor but not so strong you can’t taste the meat.
3) Not using enough smoke! Brisket needs hours of the protein breaking down and combining with the smoky flavors to become tender. 4-6 hours at 225°F (107°C) is usually enough time for me to get what I want out of it which tends to be an internal temp around 160°F (71°C).
If your smoker has hot spots make sure to rotate the brisket from top to bottom as well as left to right about every hour towards the end of cooking.
4) Putting sauce on the meat in the last 30 minutes of cooking.
Brisket requires long, slow cooking in order to become tender and all that screaming hot heat does wonderful things to the bark (the dark, flavorful crust) on your brisket. Think about barbecuing – do you put sauce on your meat right when you start or at the end?
